Best Chicken Marinade (Garlic, Ginger, Lime)

Ingredients

  • 1/3 C Soy Sauce
  • 1/4 C Olive Oil
  • 3 cloves (~1 Tbsp) Garlic, minced
  • ~1 Tbsp (~1 inch piece) Ginger, minced
  • 2 Tbsp Brown Sugar
  • 1 Small Lime, Zest and Juice
  • 1/2 tsp Red Pepper Flakes
  • 1 medium scallion, thinly sliced

Directions

  1. Combine all ingredients in a small bowl.
  2. Whisk to combine.
  3. Add chicken, toss to coat thoroughly, and let rest in refrigerator for 1-4 hours.

Notes

  • Orange will work in place of lime, but I do not recommend lemon.
  • 1/4 C red or sweet yellow onion will work in place of the scallion.
  • I’m not a fan of marinating anything longer than 4 hours unless you like meat with a mushy texture.
  • If you use Reduced Sodium Soy Sauce, add 2–3 tsp salt.
