Pancakes

Ingredients

  • 1 1/4 C flour
  • 2 1/2 tsp baking powder
  • 2 Tbsp sugar
  • 3/4 tsp salt
  • 1 large egg
  • 1 1/4 C milk
  • 3 Tbsp butter, melted

Directions

  1. Combine the dry ingredients in a large bowl.
  2. Beat the egg, then combine the wet ingredients in a medium bowl.
  3. Mix the wet ingredients into the dry ingredients until just combined.
  4. Measure out by 1/4C onto medium high (350°) frying pan.
  5. Cook until golden-brown on both sides, flipping once.

Makes 12 cakes.

Keep warm while waiting to be served by placing on a plate loosely covered by foil in an oven set to warm.

Pancakes freeze well for a couple weeks. Easily defrost and heat in the toaster for a quick and hot breakfast on the run.
