Pancakes
Ingredients
- 1 1/4 C flour
- 2 1/2 tsp baking powder
- 2 Tbsp sugar
- 3/4 tsp salt
- 1 large egg
- 1 1/4 C milk
- 3 Tbsp butter, melted
Directions
- Combine the dry ingredients in a large bowl.
- Beat the egg, then combine the wet ingredients in a medium bowl.
- Mix the wet ingredients into the dry ingredients until just combined.
- Measure out by 1/4C onto medium high (350°) frying pan.
- Cook until golden-brown on both sides, flipping once.
Makes 12 cakes.
Keep warm while waiting to be served by placing on a plate loosely covered by foil in an oven set to warm.
Pancakes freeze well for a couple weeks. Easily defrost and heat in the toaster for a quick and hot breakfast on the run.
