Mustard Herb Sauce for Pork

Had this a few weeks ago on grilled pork loin and a couple weeks ago on pan fried pork chops. Delicious! It really enhances the pork flavor, instead of hiding it like other sauces (especially barbecue or plain mustard) tend to do.

Ingredients:

  • 1 tsp oil (I prefer olive, but canola is fine)
  • 1 clove garlic, minced
  • 1/4 Cup broth (I prefer Swanson Vegatable Broth, but Chicken is OK)
  • 1 Tbsp Dijon mustard
  • 3 Tbsp unsalted butter
  • 1 tsp fresh sage, taragon, or thyme, minced (1/4-1/2 tsp dried herbs)
  • salt and pepper

Directions:

  1. Cook oil and garlic in skillet over medium heat until fragrant.
  2. Increase heat to high and add broth; reduce.
  3. Off heat, whisk in mustard, butter, and spices.
  4. Serve immediately, spooned over chops.

This only takes about 5 minutes to prep, and another 5 to cook and bring to the table. Should be enough to serve 4-6 people.
