Tzatziki Sauce

Made up some excellent Greek-style pita sandwiches (a.k.a. gyros) tonight. The best part is the Tzatziki sauce. Here’s the recipe I used, mostly cribbed from Cook’s Illustrated (subscription required):

Ingredients:

  • 1 Cup (8 oz) plain yogurt
  • 1/2 cucumber, peeled, seeded, and diced fine
  • Couple Pinches salt
  • 1/2 lemon’s juice
  • 1 Clove Garlic
  • 1 tsp dried dill

Directions:

  1. Set a mesh strainer or colander over a bowl. Line with a triple layer of paper towels or three coffee filters. Pour in yogurt, cover, and let strain for 30 minutes.

  2. Set another mesh strainer or colander over another bowl. Combine cucumber, a pinch of salt, and the lemon juice then let strain for 30 minutes.

  3. Combine strained yogurt and the cucumber mixture in a new, clean bowl with another pinch of salt, the garlic, and dill.

Notes:

  • Light yogurt works just fine.
  • Don’t skip the straining or your sauce will be slimy instead of thick and spreadable.
  • This is a great hors d’Ĺ“uvre with dried pita chips. It’s way better than hummus.
