Tzatziki Sauce
Made up some excellent Greek-style pita sandwiches (a.k.a. gyros) tonight. The best part is the Tzatziki sauce. Here’s the recipe I used, mostly cribbed from Cook’s Illustrated (subscription required):
Ingredients:
- 1 Cup (8 oz) plain yogurt
- 1/2 cucumber, peeled, seeded, and diced fine
- Couple Pinches salt
- 1/2 lemon’s juice
- 1 Clove Garlic
- 1 tsp dried dill
Directions:
Set a mesh strainer or colander over a bowl. Line with a triple layer of paper towels or three coffee filters. Pour in yogurt, cover, and let strain for 30 minutes.
Set another mesh strainer or colander over another bowl. Combine cucumber, a pinch of salt, and the lemon juice then let strain for 30 minutes.
Combine strained yogurt and the cucumber mixture in a new, clean bowl with another pinch of salt, the garlic, and dill.
Notes:
- Light yogurt works just fine.
- Don’t skip the straining or your sauce will be slimy instead of thick and spreadable.
- This is a great hors d’Ĺ“uvre with dried pita chips. It’s way better than hummus.
